The Holiday Bikini – How to Make It

WThis is a home-style take on a drink found on a new drinks list. Designed as a large-volume prepared mix that is bursting with flavours of a holiday season, which makes it excellent for hosting a festive gathering. Save the extra citrus syrup you can use for brunch beverages, puddings, or to mix more rounds of this cocktail.

The Bikini Cocktail

Makes enough for 10 servings

For the Clementine Cordial (yields 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

Ingredients for the Cocktail (produces 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

For the Syrup: Put the listed ingredients inside a pan, heat until it reaches a gentle boil, stirring until the sugar dissolves. Next, remove from the stove allowing it to cool entirely. Pour into a sealable bottle, seal and store chilled, it can be stored for up to one month.

To make Batch Mix: Pour all the liquid ingredients into a sizeable container, let it rest for an hour, then filter it preferably using muslin, making it fully clarified.

When ready to serve: Measure 85ml of your premix to a cocktail shaker containing ice, and stir gently for one minute to chill. Pour into an chilled martini glass or similar, decorate with a few cranberries adding the final touch using a brief mist of the essential oil above the glass.
